Monday Random: dog days

I am lost in this new set-up at WP. I have too much going on to figure it out today. So I will just write, and forget the bullet points for now. But I will keep it brief.

Thank you for all the kind messages regarding the death of my sister, and the subsequent death, three weeks later, of my brother-in-law, her husband. It’s been difficult. My mind is mush. Being able to just write down what I feel and not even think about critics, well it means a lot to me. I’m sorry if I did not reply to you or not in a good way. I really am not right at the moment, but I will be.

Prayer helps more than anything. I wouldn’t even be sleeping if it weren’t for my Heavenly father. Wow, I have so much to be thankful for.

I am also really upset for friends and neighbors in other states dealing with wildfires right now. It’s so scary. Also the continued hate and violence. I try to talk about it, even to family, and it seems there is no right thing to say. Some people don’t even let you explain what you meant by that, they just draw immediate conclusions. I find myself getting quieter and quieter.

I am still baking a lot, taking a page from the book of my neighbor, who also approaches recipes in a scientific way. Who knew? I’ve never been good at math or science, but I find that in baking, coming up with formulas that work, now that’s satisfying.

I will close with this new recipe for another neighbor. She was saying that her favorite chocolate chip cookie is the one that spreads out and is crisp on the edges and very chewy. So I made this recipe for her. I hope you enjoy it. Take care, and thanks for all the fish–

Victoria’s Cookies

Pre-heat oven to 375F

Cream together well:
1 stick butter (1/2 cup)
1 cup brown sugar, packed

Stir in :
1 beaten egg
1/2 teaspoon vanilla

Blend well at this point but do not beat

Stir together with whisk or with fork:
1 cup plus 2 Tablespoons flour
1/2 teaspoon salt
1/2 teaspoon baking soda

Stir dry ingredients into wet ingredients until mixed thoroughly.
Stir in 1 cup chocolate chips, any type.

Drop onto buttered cookie sheet by Tablespoonfuls or rolled into balls.
Bake for 9 minutes.

If you chill the dough, they will spread less.

Around my very modest circles I am known for my cookies. No, that is not a euphemism, it is true. I have nice cookies. Sumptuous and delectable. I also make a mean lasagne and I am known for my homemade soup.
